BLT Chicken Over Orzo

Bacon
1/2 cup
Cherry tomatoes

Spinach (fresh)

Wash & halve the cherry tomatoes. - Step 2
Roughly chop the bacon into 1/2 inch pieces. - Step 3
Butterfly the chicken breasts by slicing in half through the center, creating two equal portions. Pat the chicken dry. Season all over with salt & pepper. We also love a dash of garlic powder or Italian seasoning if you have. - Step 4
Cook the orzo according to package instructions. - Step 5
Meanwhile, in a skillet over medium heat, cook the bacon until crisp, stirring & flipping occasionally, about 3-4 min. Transfer to a small bowl, leaving the grease in the pan. - Step 6
Drain the orzo & set aside. - Step 7
Add the chicken to the same pan over medium-high heat. Sear, undisturbed for 3-5 min on each side until golden, then transfer to a plate. - Step 8
Add in the cherry tomatoes. Sauté for 1 min over medium heat. Reduce the heat to low & add a 1/4 cup of water to the pan to deglaze the bottom. - Step 9
Stir in the spinach & cook until wilted, about 1-2 min. Add in the bacon & parmesan cheese. Stir to combine. Finally stir in the heavy cream & mix well for 1 more min. - Step 10
Add the chicken & its juices back to the pan. Spoon the sauce over top & simmer all together for 2 more min then remove from the heat. - Step 11
Season the cooked orzo with a bit of olive oil or butter. Add a pinch of salt & pepper. Mix it all together. Serve the BLT chicken over the orzo & enjoy!
