BLT Chicken Burger with Potato Salad

Bacon
1 Leaf
Bibb lettuce
1 slice
Tomato (beefsteak)

Ground chicken

Pepper Jack cheese (slices)

Bread crumbs (plain)

White onion

- Step 1
Grate the onion using a cheese grater. - Step 2
Transfer the onion to a mixing bowl. Add the mayo, breadcrumbs & ground pepper. Add your favorite seasonings, we like paprika & garlic powder here. Mix it all together. - Step 3
Add in the ground chicken. Mix it all together using your hands until everything is combined. Careful not to over mix! - Step 4
Equally portion the meat & form 1 inch thick, round patties. - Step 5
Heat a skillet over medium-high heat. Add the bacon & cook undisturbed, 2-3 min on each side. Once cooked to your liking, transfer the bacon to a paper towel-lined plate, keeping the remaining bacon grease in the pan. - Step 6
Add the burger patties to the skillet (be careful not to overcrowd the pan!) Sear undisturbed on the first side until golden brown, about 2-3 min. - Step 7
Meanwhile, wash & slice the tomato. - Step 8
Season the patties with salt then flip to sear the other side. Top each patty with a slice of pepper jack cheese. Continue cooking until golden & cooked through. - Step 9
On a toasted (optional) burger bun, spread a bit of mayo if you wish. Arrange the chicken burger on the bottom bun. Top with tomato, bacon & lettuce. Close the burger with the top bun & serve with a side of potato salad. Enjoy!
