  • Step 1
    Grate the onion using a cheese grater.
  • Step 2
    Transfer the onion to a mixing bowl. Add the mayo, breadcrumbs & ground pepper. Add your favorite seasonings, we like paprika & garlic powder here. Mix it all together.

    Add in the ground chicken. Mix it all together using your hands until everything is combined. Careful not to over mix!

    Equally portion the meat & form 1 inch thick, round patties.
  • Step 5
    Heat a skillet over medium-high heat. Add the bacon & cook undisturbed, 2-3 min on each side. Once cooked to your liking, transfer the bacon to a paper towel-lined plate, keeping the remaining bacon grease in the pan.

    Add the burger patties to the skillet (be careful not to overcrowd the pan!) Sear undisturbed on the first side until golden brown, about 2-3 min.

    Meanwhile, wash & slice the tomato.

    Season the patties with salt then flip to sear the other side. Top each patty with a slice of pepper jack cheese. Continue cooking until golden & cooked through.
  • Step 9
    On a toasted (optional) burger bun, spread a bit of mayo if you wish. Arrange the chicken burger on the bottom bun. Top with tomato, bacon & lettuce. Close the burger with the top bun & serve with a side of potato salad. Enjoy!
