    Wash & small dice the cucumber.
  • Step 2
    Wash the peppers & remove the seeds. Small dice the peppers.
  • Step 3
    Peel & small dice the shallot.
  • Step 4
    Small dice the feta cheese.
  • Step 5
    Rinse & finely chop the parsley.
  • Step 6
    In a bowl, combine all ingredients: rinsed & drained black-eyed peas, bell peppers, cucumber, feta, shallots & parsley. Squeeze in lemon juice & add a drizzle of olive oil. Season with salt & pepper. Toss well to combine. Serve & enjoy!
