Black Bean Soup

Black beans (canned)

Bell pepper (red)

Red onion

Taco seasoning
1 tsp
Garlic powder
1 cup
Veggie broth

- Step 1
Wash the pepper & remove the seeds. Small dice the pepper. - Step 2
Peel & dice the onion. - Step 3
Heat a drizzle of oil in a small pot over medium heat. Add the diced onion & pepper. Sautè 5-6 min until the veggies are lightly browned. Meanwhile, drain & rinse the black beans. - Step 4
Stir in taco seasoning & garlic powder. Cook for 1 more min until fragrant. - Step 5
Add the beans & veg broth to the pot. Stir & bring to a boil. Lower the heat to a simmer, cover & cook for 15 min. - Step 6
Uncover, stir & carefully use an immersion blender to puree the soup a few times directly in the pot. Or, ladle out 1/2 of the soup purée in a standard blender until smooth, then stir it back into the pot. Season to taste with salt & pepper. - Step 7
Serve, topped with avocado & jalapeño if desired. Enjoy!
