Beets (cooked)

1/8 cup
Quinoa

1 tbsp
Walnuts

2 tbsp
Goat's cheese

1 handful
Spring mix lettuce

1/2 tsp
Apple cider vinegar

Cook the quinoa according to the package instructions. Then set aside to cool. - Step 2
In a small bowl, whisk together the vinegar, a drizzle of oil, salt & pepper. Then cube the beets. - Step 3
Add the salad greens, cooled quinoa, beets, crumbled goat cheese & walnuts to a salad bowl. Drizzle the dressing over top. Serve & enjoy!
