  • Step 1
    Cook the quinoa according to the package instructions. Then set aside to cool.
  • Step 2
    In a small bowl, whisk together the vinegar, a drizzle of oil, salt & pepper. Then cube the beets.
  • Step 3
    Add the salad greens, cooled quinoa, beets, crumbled goat cheese & walnuts to a salad bowl. Drizzle the dressing over top. Serve & enjoy!
