Bring the coconut milk to a simmer in a small pot over low heat. - Step 2
Turn off the heat. Stir in the chia seeds & a pinch of salt. Let the mixture thicken for 3-5 min, stirring occasionally. - Step 3
Spoon the pudding into bowls. - Step 4
Top with sliced banana. - Step 5
Add a drizzle of maple syrup. Garnish with toasted coconut flakes or coconut chips (optional). Enjoy!
