Parmesan (grated)

Spinach (fresh)

Preheat the oven to 400°F. Clean & thinly slice the mushrooms. - Step 2
In a small bowl, mix together the sour cream, parmesan, salt, pepper & half the spinach. - Step 3
Butter a baking dish. Spread the cream-spinach mixture into the dish. - Step 4
Gently break the eggs into the dish, keeping them spaced apart. Arrange the mushrooms & most of the goat cheese around the eggs. Season with salt & pepper. - Step 5
Bake for 15 min, or until the eggs are cooked to your liking. - Step 6
Garnish with the rest of the spinach & goat cheese. Season with salt & pepper. Brunch is served!
