Heat a non-stick skillet over medium heat. Add the bacon strips & cook until crisp. Transfer to a paper-towel lined plate. - Step 2
Crack eggs in a small bowl. Season with salt & pepper. Beat the eggs together. - Step 3
Melt a dab of butter on the same pan. Pour in the eggs & swirl the pan to spread the eggs out evenly. Allow the eggs to set, about 30 sec. - Step 4
Add a slice of cheese & fold up the edges of the eggs (like a crepe or an omelette!) Lay the remaining slice of cheese on top. Lower the heat & cover the pan. Let the cheese melt, about 30 sec - 1 min. - Step 5
On the bottom half of a kaiser roll, lay the bacon & place the cheesy eggs on top. If you like to spice up your BEC with ketchup or hot sauce, add it here! Close the sandwich, serve & enjoy!
