Pearl barley

Toasted sesame oil
2 tsp
Soy sauce
1 tbsp
Cilantro (fresh)

- Step 1
Cook the barley according to the package instructions. - Step 2
Cut off the top of the pomegranate. - Step 3
Slice the pomegranate into quarters. - Step 4
(To avoid turning your kitchen into a crimson crime scene, seed the pomegranate in a bowl of water.) - Step 5
Remove the seeds from the segments. Rinse them in the bowl of water. - Step 6
Fluff the cooked barley. - Step 7
Peel the avocado & remove the pit. Chop the avocado into chunks. Add the avocado, brown rice, pomegranate seeds, chopped cilantro, sesame oil, soy sauce, salt & pepper to a salad bowl. - Step 8
Garnish with a bit of minced ginger (optional). - Step 9
Toss it all together. Enjoy!
