- Step 1
Preheat the oven to 400°F. Wash & trim the asparagus. - Step 2
Add the asparagus to a pot of salted boiling water. Cook for 2-3 min, or until crisp-tender. - Step 3
Be sure to follow the puff pastry package instructions! Unroll the dough onto a parchment-lined backing tray. Use a rolling pin to thin the dough. Pierce it several times with a fork. Bake for 5 min at 400°F. - Step 4
In a small bowl, mix together the goat cheese, heavy cream, salt, pepper & a drizzle of olive oil. - Step 5
Remove the puff pastry from the oven. Carefully spread the goat cheese-cream mixture over the dough, leaving a border around the edges. - Step 6
Arrange the asparagus over the tart. - Step 7
Season with salt & pepper. Bake for 15-20 min at 400°F. - Step 8
In a small bowl, mix together the pesto & a drizzle of olive oil. - Step 9
Remove the tart from the oven. Drizzle the pesto over top. Serve & enjoy!
