Asparagus (fresh)

Pistachios (roasted)

Lemon

Ricotta cheese

Mint (fresh)

- Step 1
Wash the asparagus. Snap off the woody ends. - Step 2
Using a veggie peeler, shave the asparagus into long ribbons. - Step 3
Roughly chop the pistachios. - Step 4
In a small bowl, whip the lemon zest, ricotta cheese, salt & pepper. - Step 5
Add the lemon juice, vinegar, salt, pepper & a healthy drizzle of olive oil to a mixing bowl. - Step 6
Add the asparagus to the mixing bowl. Toss it together with the dressing. - Step 7
Spread the whipped ricotta over a serving plate. Arrange the dressed asparagus over top. Sprinkle with pistachios & chopped mint. Enjoy!
