Artichoke hearts
1 handful
Arugula
1 tbsp
Parmesan
1 tbsp
Hazelnuts

Cut the artichoke hearts in half. Grate the parmesan, if necessary. Coarsely chop the hazelnuts. (You could also use sliced almonds!) - Step 2
Add the arugula to a salad bowl. Top with the artichokes, parmesan, hazelnuts & a drizzle of olive oil. Season with salt & pepper. Add a squeeze of lemon (optional). Spring has sprung!
