  • Step 1
    Wash & cut the eggplant into small cubes.
  • Step 2
    Wash & cut the zucchini into small cubes.
  • Step 3
    Wash the pepper & cut them in half. Remove the core & seeds. Cut the peppers into small cubes.
  • Step 4
    Wash & cut the tomato into small cubes
  • Step 5
    Peel & dice the onion.
  • Step 6
    Peel & finely chop the garlic.
  • Step 7
    Add the onions, garlic, zucchini, peppers & eggplant to the air fryer basket with the rack. Season with half of the herbes de Provence & a drizzle of olive oil. Season with salt & pepper. Mix well, then cook in the air fryer for 20 min at 350°F.

    After 20 min, remove the veggies from the air fryer. Mix them together, then add the tomatoes & mix again. Continue cooking in the air fryer for 10 min at 350°F.
  • Step 9
    Layer the salmon fillets on top of the veggies. Drizzle with olive oil. Season with salt, pepper & the remaining herbes de Provence. Return to the air fryer & cook for 6-8 min at 400°F.
  • Step 10
    Meanwhile, heat the mixed grains according to package instructions.
  • Step 11
    When the veggies are tender & the salmon cooked through (flakes easily with a fork & no longer translucent), remove from the air fryer.
  • Step 12
    Serve the mixed grains on a plate with the ratatouille & salmon. Garnish with fresh parsley, if you have any. Enjoy!
