- Step 1
Wash & cut the peppers, removing the core & seeds. Cut into 1-inch pieces. - Step 2
Wash & cut the zucchini into half moons. - Step 3
Peel & cut the red onions into quarters, then break them apart into petals. - Step 4
Cut the chicken into 1-inch pieces. - Step 5
In a bowl, add the peppers, zucchini, red onions, cherry tomatoes, 1/2 of the grated garlic & 1/2 of the smoked paprika. Season with salt & pepper. Drizzle with olive oil. Mix everything together. - Step 6
In a second bowl, add the chicken, the remaining grated garlic & the remaining smoked paprika. Season with salt & pepper. Drizzle with olive oil. Mix everything together. - Step 7
On a skewer*, add a piece of chicken, onion, zucchini, cherry tomato & bell pepper. Repeat this process 2-3 times depending on the length of your skewer. Repeat as many times as needed. *See our tip for this step. - Step 8
Place the skewers in the air fryer basket with the rack. Cook them in the air fryer for 10-12 mins at 400°F. - Step 9
Once the chicken is cooked through (165°F internal temp) & the veggies are tender, remove the skewers from the air fryer. Serve on a plate with a green salad dressed to your liking. Enjoy!
Recipe tip
If using wooden skewers, soak them in water for about 30 mins beforehand to prevent them from burning! Times and temperatures vary for all air fryers, so try cooking in batches and avoid overcrowding the basket for even cooking! Always refer to the air fryer manual for best practices & results!
