Stovetop, Frying pan, Pan lid, Knife

Tomato

Step 1

Wash & slice the tomato.

Mozzarella (fresh)

Step 2

Thinly slice the mozzarella.

Pesto
White bread (sliced)

Step 3

Spread the pesto over each slice of bread.

Mozzarella (fresh)
Tomato
Basil (fresh)
Pine nuts

Step 4

Top half of the bread slices with tomato. Layer the cheese over top. Add pine nuts & basil (optional).

Arugula

Step 5

Season with salt & pepper. Add the arugula. Close the sandwiches.

Step 6

Melt a dab of butter in a pan over medium heat. Add the sandwiches. Cook for 2 min on each side. Use a spatula to press the sandwiches down as they cook. They should be melty & golden brown.

Step 7

Cover the pan & remove from heat. Let the cheese melt for 1-2 min.

Step 8

Cut the sandwiches in half or thirds. Serve hot & enjoy!
